I've just read about hitting the ding early or late when putting to help combat breaks but does this work the same for crosswinds?
If the wind is 25 right to left does missing the ding on the right combat the effect of the wind, or is the effect of missing the ding random?

yes it does, but you should be very careful.
when you miss ding, chance of deviation increases as well as other freaky flying... like loss of elevation, spin, etc....
while it works, it really needs to be practiced.
