    does playing in country club tournaments count toward my avg?

    I do believe so. But, it's been a while since I played, so maybe someone can correct me:)

    Yes they do. Any ranked round counts toward you average. And All Country Club tourneys that a stroke play are ranked rounds. I used one rather easy CC tourney setup to go from master to tour master.
