On a real golf course when the wind is, for example, 10 mph from the east, it usually stays that way for most of the round. Why does the wind direction change on every hole?

It might be more realistic to keep the wind direction the same for a round. This would be particularily true for out and back courses like Saint Andrews

The way it is now, I have the impression that i'm playing in a whirlwind.

Each hole is treated independent of the others. It's the way the game is designed.
