Is there a setting or something that I can adjust that will allow me (level 39) to play against people with a similar level?
I keep playing the 3 round, 10,000 credit entry games and playing people level 103.....doesn't seem fair.

No, there's no such setting. Whom you match up against in the coin rooms is done randomly.
