I have noticed for some time that when I play an opponent on my Kindle upon winning I would receive 900 coins, when my opponent wins they get anywhere from 920 to 965 coins, how is this calculated ?

It's because of their apparel. Different apparel items have different bonuses, the players you are referencing are using apparel that offers bonus coins when winning in coin rooms.
