Kinda something different for you guys to try if so inclined. You will love it.
Watermelon Salsa
If you want it hotter, add more jalapeno. Otherwise, it's not too spicy, just has a bit of a kick.
1 1/2 teaspoons lime zest (from about 1 lime)
1/4 cup fresh lime juice (from about 3 limes)
[the limes I used were very large, more the size of lemons, so take that into consideration]
1 tablespoon sugar
3/4 teaspoon pepper
4-5 cups seeded and chopped watermelon
1 cucumber, peeled, seeded and diced
1 jalapeno pepper, seeded and minced
1 small red onion, finely chopped
10 fresh basil leaves, finely chopped (more if you like it)
1/2 teaspoon or LESS garlic salt
1/2 teaspoon sea salt (taste it before you add)
Stir together the lime zest, lime juice, sugar and pepper. Add the watermelon, cucumber, jalapeno, onion, basil. Toss it all together.
Chill the salsa until ready to serve and add the garlic salt and salt just before serving.
Eat it with meat or chips.
