I assume you are aware of a thing called 'licencing' right? EA has The Players Championship, and by extension the PGA Tour, locked in right now and they don't have a reputation of sharing with other game-makers. With that said, I think it would be a mistake to 100% rule out the possibility of Sawgrass appearing in WGT, but even if WGT is allowed to have Sawgrass in their game, they then have to map the entire course and this is a very costly and time consuming process from what I've heard... hence why new courses are few and far between.
EDIT: I made a comment about another online golf game having Sawgrass but on closer inspection it looks like a cheap knock-off and not the real course...
